I have a NEW favorite breakfast shake: Joy The Baker’s Peanut Butter and Banana Smoothie! It hits the spot when you are hungry for something a little creamy and a little peanut buttery in the morning. Sure, it might not pack quite the nutritional punch as a standard AM green smoothie, but it certainly has a few surprising nutritional benefits, not to mention that it will keep you full until lunch! And even better…this breakfast is SO simple. Frozen banana, coconut milk, a little greek yogurt, a dash of cinnamon, and (my favorite…..) CHIA! Check out the original recipe here: from Joy The Baker.
The first few times I made it, I topped off my smoothie with a few spoons of UDIs G-free Vanilla Granola (or homemade if you have the time…Joy’s looks awesome!) You could also make this into a little dessert by topping it off with a scoop of carob chips. I let this sit in the fridge for a few hours and it was EVEN BETTER. (OK so I got tied up at work and didn’t get to eat until a few hours later…and it was a happy accident.) It turned into a pudding-like consistency from the chia seeds and now I had peanut butter banana pudding. Trust me…it was awesome!
This tasty breakfast shake may sound decadent but it’s packed with health benefits!!!
Bananas: Tons of potassium, fiber to keep you full, and offers yummy creaminess!
Chia: These little seeds are a major powerfood. Fiber. Omega fatty acids. Iron. Calcium. Plus they hold 3x their weight in liquid which keeps you feeling full. BOOM.
Coconut Milk: Medium chain triglycerides in the milk help fight inflammation and boost the immune system with anti-microbial properties.
Greek Yogurt: Ok I’m not huge on yogurt but this is a great way to get protein to keep you full, fuel you after a workout and set you up for a power day.
Carob Chips: Similar to chocolate chips but with less sugar!! While they have some good antioxidant power….I don’t need to discuss why these are good for you. Sometimes your week just calls for a little hint of chocolate with breakfast.
