I was hungry for a little treat this past week but was not sure what to have to satisfy my sweet tooth! I have maxed out on fresh fruit recently and just wanted something different! I have been seeing recipes for paleo truffles on Pinterest, as well as from Elana’s Pantry and Dianne at Balanced Bites. I did not have all of the ingredients for any one specific truffle recipe that I came across so I just kind of threw together what I had in the pantry that sounded like the truffle recipes I was seeing. I have to say…they turned out A-mazing! They actually taste very similar to Hail Merry Macaroons with a little cacao crunch. They are super simple and quick to make. Who needs sugar filled candy when you can whip up these beauties in less than 10 minutes!?
3 Heaping Tablespoons Coconut Butter (Coconut Mana)
1 Tablespoon Coconut Oil
2 Tablespoons Maple Syrup
2 Tablespoons Coconut Flakes (Unsweetened!)
1/2 cup Raw Cacao Powder
2 Tablespoons Cacao Nibs
1 tsp of Madagascar Vanilla Extract
Dash of Himalayan Sea Salt
What To Do
Mix all of the ingredients together well until “batter” is nice and smooth. You may need to chill the bowl after you mix it for just a FEW minutes to tighten up the consistency. This is so you can get the truffles into a ball shape without the batter being too sticky and runny. It will only take a few minutes, since
coconut oil hardens quickly. When the consistency is firm, shape the truffles into tiny rounds about the size of a quarter. I rolled a few truffles in coconut flakes to keep them from sticking together and to look fancy too!
Be sure to store these little treats in the fridge in an air tight container! If you like a softer, gooey truffle, remove from refrigerator and let stand for at least 5 minutes before eating.
OMG these are amaaaazing! Plus, with no sugar (just the maple!), no creepy ingredients, good healthy fats from coconut and the antioxidant rich raw cacao….hello awesome treat! I hope you enjoy these little truffles as much as I do!
